- 2 cans diced tomatoes (14.5-oz each)
- 1/2 onion, diced
- 1/4 cup green pepper, diced
- 1 tsp minced garlic
- 1 Tbs lime juice
- 1/2 tsp salt
- Pepper, to taste
- 3 Tbs chopped fresh cilantro (optional)
- Pinch of red pepper flakes (optional)
- Put all the ingredients in a blender or food processor.
- Pulse until the salsa is as smooth as you like it. Scrape down with a spatula as necessary.
- Taste and adjust seasoning, if needed.
- Refrigerate. The flavors will combine as the salsa chills.
