Ingredients:
- 1/4 cup white flour
- Sea salt and freshly cracked pepper, to taste
- Garlic powder, to taste
- 2 eggs, beaten
- 3/4 cup plain panko crumbs
- 1 teaspoon non-salted Italian seasoning
- 1/4 teaspoon of salt
- 2 tablespoons parmesan cheese
- 3 Portabella mushrooms, sliced thickly
- Marinara sauced, warmed (or your favorite dipping sauce)
Directions:
- Preheat the oven to 425 degrees F. You can use a convection setting.
- Line a baking sheet with tin foil, then place two baking wire racks on the baking sheet. Coat wire racks with cooking spray.
- Place the flour on a plate. Season with sea salt, freshly cracked pepper, and garlic powder. Mix well. Crack eggs in a separate shallow dish; beat until well combined. Pour the plain panko crumbs, Italian seasoning, salt, and parmesan cheese on a different plate from the flour mixture, and mix well.
- Lightly coat the Portabella slices with the flour mixture; dip in the egg mixture; followed by coating evenly in the panko crumbs mixture. Place on the prepared baking racks. Repeat with remaining Portobello slices.
- Place the baking sheet in the oven and cook, until golden brown, about 9-12 minutes. If you are not using the convection setting on your oven, make sure to flip the fries over halfway through cooking time.
- Serve the Portabella fries with warmed marinara sauce or your favorite dipping sauce.
