These Chocolate Covered Berries are easy to make and an excellent dessert option for any occasion!
Serves: 4
Ingredients:
- 12 strawberries
- 3 ounces (approximately ½ cup) dark chocolate, bitter sweet, or semi-sweet chocolate chips
Directions:
- Microwave chocolate in a small bowl in 10-15 second intervals. Continue microwaving in 10-15 second intervals until melted, stirring after each interval. Or, place in the top of a double boiler over hot, but not boiling, water. Stir until melted.
- Dip strawberries in the melted chocolate, so that the bottom half of the strawberry is covered. Place on a baking sheet or plate lined with wax or parchment paper to cool.
Tips:
- For added health benefits, look for dark chocolate with 70% or greater cocoa, which studies have linked to higher health-promoting properties.
- If chocolate is overheated, it becomes grainy or lumpy and it will lose its shine when it hardens. To avoid this, be sure to heat in very short increments or in a double boiler over hot, but not boiling, water and stir frequently. Heat just until the chocolate is melted.
- Strawberries were used in the nutrition analysis of this recipe, but if fresh strawberries are not an option, 1 ½ inch chucks of banana slices or dried apricots are good alternatives for dipping in chocolate. These fruits are higher in carbohydrates, however.
