- 2 cups corn (canned or frozen)
- 1 can diced tomatoes and chiles, like Rotel (10-oz.)
- 1 tsp vegetable oil
- 1 Tbs lime juice
- 1/3 cup sliced green onion
- 2 Tbs chopped fresh cilantro (optional)
- Combine all ingredients in a large bowl and mix well.
- Serve immediately, or chill first to give the flavors time to combine.
- Substitute diced red onion for the green onions.
- Add a can of beans or chopped cooked chicken to make this a filling meal.
