Corn and Chile Salad

Serves: 6


  • 2 cups corn (canned or frozen)
  • 1 can diced tomatoes and chiles, like Rotel (10-oz.) 
  • 1 tsp vegetable oil
  • 1 Tbs lime juice
  • 1/3 cup sliced green onion
  • 2 Tbs chopped fresh cilantro (optional)


  1. Combine all ingredients in a large bowl and mix well.
  2. Serve immediately, or chill first to give the flavors time to combine.


  • Substitute diced red onion for the green onions.
  • Add a can of beans or chopped cooked chicken to make this a filling meal.
